Better-Than-Takeout Thai Stir-Fry

Ingredients 1/2 cup chicken broth 2 cups sliced mushrooms 1/2 sweet onion, sliced 1 small head broccoli, cut into spears 1 tablespoon tamari or soy sauce 1/4 cup creamy peanut butter 1 pinch red pepper flakes (optional) 1 (12 ounce) package shredded coleslaw mix 3 cups bean sprouts 1 (9 ounce) package diced cooked chicken breast meat 1 tablespoon toasted sesame seeds (optional) Directions Bring the chicken broth to a boil in a large, deep skillet over medium-high heat. Add the mushrooms, onion, and broccoli; cover, and steam until tender, about 5 minutes. Stir in tamari, peanut butter, and pepper flakes until smooth. Add the coleslaw mix, bean sprouts, and chicken; cook until heated through. Sprinkle with toasted sesame seeds to garnish. |
