Shrimp Scampi Pizza with Sundried Tomatoes, Roasted Red Pepper, and Prosciutto

For the Shrimp Scampi:
12 medium size shrimp, shelled and deveined
3 tbs unsalted butter
2 tbs chopped Italian Parsley
Minced Garlic
Parmesan Cheese
3/4 -1 cup jarred tomato sauce of your choice
*seasoned to your own taste, I add garlic, oregano, parmesan cheese, and basil
3/4 cup mozzarella cheese
8 -10 slices sundried tomatoes (jarred)
10-12 slices roasted red pepper (jarred)
5 slices prosciutto
2 gloves garlic, minced

1. To make the shrimp scampi, soften the butter slightly in the microwave and then combine with parsley, garlic and parmesan cheese in a bowl. Arrange the shrimp on a pan and place a small dollop of your mixture to each shrimp and cook at 350 degrees until opaque.
** I know scampi calls for lemon juice but I omit this.

2. Cut the prosciutto into strips and pan or griddle fry (no oil or butter and until crispy)

2. Heat and season your tomato sauce in a small sauce pan on the stove top. (this step isn't necessary as it heats in the oven, but I would like to think this melds the flavors of my spices better)

3. Spread the tomato sauce onto an unheated pizza crust.

4. Sprinkle the mozzarella cheese (reserve a tiny bit to cover the shrimp), parmasan cheese and minced garlic over the sauce.

5. Place the shrimp, sun dried tomatoes, roasted red pepper, and prosciutto on top and spread the remaining amount of mozzarella cheese over each shrimp and cook according to the package instructions on the pizza crust/and until cheese is melted.
