Healthier Mexican Lasagna
1 lb. Ground Turkey
1 - Medium Onion coarsely chopped
1 – package taco seasoning
2 – 10 oz. cans of diced tomatoes with green chilies
1 – 8 oz. can of tomato sauce
1 – can beans (Pinto or Black bean or another bean of your choice) drained
16 oz. shredded cheese of your choice
3 – med. or large whole wheat flour tortillas
Cook and drain the ground turkey and onion
Return ground turkey and onion to skillet and add taco seasoning, tomatoes, tomato sauce and simmer for 15 minutes. Add drained bean at the end of the simmer time.
Spoon in and evenly spread ¼ of mixture in the bottom of a pie dish. Layer with one tortilla, ¼ of mixture, and cheese and repeat. Bake at 350 for 20 minutes.
Rest for 10 minutes; cut and serve.
Fat Free Sour Cream with cilantro mixed in makes a great topping.
