Blueberry Flax Pancakes - Sydnee - 05-20-2012 02:13 AM

Ingredients
1 1/2 cups dry pancake mix
1/2 cup flax seed meal
1 cup skim milk
2 eggs
1 cup fresh or thawed frozen blueberries

Set a nonstick skillet over medium heat.
In a medium bowl, stir together the pancake mix and flax seed meal. In a separate bowl or measuring cup, whisk together the milk and eggs. Pour the liquid into the dry Ingredients, and stir just until moistened.
Spoon 1/4 cupfuls of batter onto the hot skillet. Sprinkle with as many blueberries as desired. Cook until bubbles appear on the surface, then flip and cook until browned on the other side.[/hide]

Thank you for your post. Would it work to use a regular skillet, and put a non stick spray or is their a big difference. What is the difference or use of flax seed meal, because I have never seen that used, so I don't know the use of it or what it does. Also, can we replace the blueberries with chocolate chips because I think I'll like that better. Thanks!

Thanks for the great recipee, this really does look good. Alison yes that would work fine for the non stick spray on the regular skillet, but they have oil a lot so see if you want oil in your food. I don't know what the seed meal is either but someone else can log on and reply.

Amazing pancakes, really they are great. A non stick spray would be fine but the closer you adhere to the recipee the higher chance of things coming out perfectly so its up to you! Thanks for the post!
